<p><strong>Introducing Spark! Wellness Tours!</strong><br />
Leave  the city behind for some fresh air, guided hiking, gentle outdoor  yoga, a  delicious local lunch, and a tour through the charming town of  <a href="http://cityofbeacon.org/" target="_blank">Beacon</a> – known  for  its shops, cafes, and<a href="http://www.nytimes.com/2009/03/29/nyregion/westchester/29Rtownwe.html" target="_blank"> local art scene</a>.</p>
<p><strong>Our Itinerary:</strong></p>
<ul>
<li> Bus leaves Manhattan at 8:00am on  Saturday, May 1</li>
</ul>
<ul>
<li>We kick off our day with a 3.9-mile hike  through the woods and  along the river in Beacon. We’ll be on a  relatively flat, easy trail so  this is perfect for most fitness levels.  This gentle hike will take  approximately 2 hours and will afford us  beautiful views of the Hudson  River.</li>
</ul>
<ul>
<li> Our hike will be followed by a series of gentle, standing yoga   stretching poses held outside by the amazing Kathy Hogan (local yoga   instructor and nature expert).</li>
</ul>
<ul>
<li>Post-hike and yoga, we’ll be  hungry! So we’ll be having a  delicious, healthy lunch at one of  Beacon’s charming restaurants.</li>
</ul>
<ul>
<li> After lunch, you’ll have approximately 2 hours to explore the  town  of Beacon on your own and experience its shops (such as the  heralded <a href="http://hudsonbeachglass.com/" target="_blank">Hudson   Beach   Glass</a>),  <a href="http://homespunfoods.com/" target="_blank">cafes</a>,  and <a href="http://beaconarts.org/index.php?option=com_content&amp;task=view&amp;id=27&amp;Itemid=29" target="_blank">art galleries</a>. OR, you’ll have the choice of   visiting the fabulous <a href="http://diabeacon.org/sites/main/beacon" target="_blank">Dia:  Beacon art museum</a>.</li>

<li>Our bus heads back to NYC at around  4:30p.</li>
</ul>
<p>Join our community of health-conscious explorers for  this great day  outside of the city. Meet new friends and spend some time  in the  country!</p>

<p>Ready for a super easy &#8211; yet super delicious &#8211; roast chicken recipe? I just made this up tonight and it is rocking my world!</p>
<p>I had some baby chickens on hand (&#8220;poussins,&#8221; which are basically cornish game hens) and wanted to go beyond my usual &#8220;rubbed with olive oil and sea salt and stuffed with half a lemon&#8221; combo (although let me tell you, that&#8217;s a simple and tasty way to prepare a bird!). I took a look through my pantry and rifled through the spices a bit before I settled on saffron. Saffron is one of those amazingly delicious and subtle spices that always seems to make food taste a bit more luxurious and a little exotic. It seemed like the perfect thing to spice up a regular ol&#8217; Monday night meal.</p>
<p>Borrowing from suggestions I found from a google search, I took a large pinch of saffron threads and ground it in a mortar and pestle, along with a good dose of sea salt and fresh ground pepper. I didn&#8217;t measure, cause I never do when simply rubbing salt and pepper on a chicken. Once I rubbed my spice concoction all over the outside and inside of the chickens, I stuffed them both with half of a fresh lemon. Then I stuck them in my pre-heated 400 deg oven and left them alone until they were ready and roasted! (About 40 minutes in my oven, using the &#8220;convection&#8221; setting.)</p>
<p>Voila! Easy, scrumptious, beautifully golden-hued chicken that elevated a normal weeknight meal from &#8220;really good&#8221; to &#8220;wow!&#8221; I served it alongside simply sauteed kale with garlic and rejoiced with in new-found recipe. This would easily work well with any kind of chicken parts you have on hand. Enjoy!</p>

<p>I wanted to take a moment and wish each and every one of you a wonderful, happy, healthy holiday!</p>
<p>I hope you are enjoying your time with friends and family, coworkers and neighbors.</p>
<p>And I hope you are remembering to breathe! In the midst of the chaos of the holiday season, it can be easy to get swept up in the busyness and constant &#8220;doing&#8221; &#8212; shopping, socializing, cooking, etc. Take this email as a reminder to stop whatever you&#8217;re doing and take a couple of deep breaths. Close your eyes, let your shoulders relax, and simply breathe.</p>
<p>It can be all too easy to neglect our self care during this busy season. Remember to prioritize doing at least one thing for health for yourself each day: whether it&#8217;s cooking yourself a healthy breakfast, getting in a 30 min workout, taking a few minutes to meditate or breathe, eating some veggies, getting a massage, spending time with people you like, breathing in some fresh air, or getting a hug after a long, busy day, it all adds up to healthier, happier you!</p>

<div>This is a 3-Month Program: Sessions meet twice at my Union Square office at 80 East 11th Street, corner of Broadway. Each session is 2 weeks apart and is 1-hour long. We will cover a new, exciting topic at each meeting. $225 program fee ($75/month) includes all sessions and handouts.</div>
